There is no rule that says you can only eat caramel apples in the fall. And if there is, it's a stupid rule and you should definitely not follow it. We assure you, you can share these Turtle Apple Pops any time of the year and no one will care. In fact, they will be thrilled, because these pops from @healthylittlepeach solve the age-old problem: what to do with the rest of the apple after you've eaten all of the candy off the outside (you know you just eat the rest out of guilt)? Instead of coating a whole apple with chocolate and caramel, you're coating thick slices, giving you the perfect ratio of fruit to chocolate. Another genius idea we didn't think of...sigh.

Ingredients
3 Granny smith apples, cut into
1/2" slices (about 12 slices)
3 cups semi-sweet chocolate
chips
2 tbsp. coconut oil
1 cup unwrapped caramels
(about 20)
2 to 3 tablespoons heavy cream
1 cup walnuts, chopped
12 popsicle sticks
Coarse sea salt
Instructions
Slice the apples straight down from top to bottom, right through the core.
Cut a small slit in the peel at the bottom of each slice, then insert the popsicle sticks.
Microwave the chocolate chips and coconut oil in a microwave-safe bowl for 30 seconds at a time (stir after each) until smooth.
Coat the apple slices with the chocolate and place onto parchment-lined baking sheet. Top with the nuts right after dipping, then refrigerate until firm (at least 15 min.).
Use the same method to melt the caramel (microwave the unwrapped caramels and 1 tbsp. cream- add the remaining cream if too thick).
Drizzle the coated apples with the caramel and sprinkle with the sea salt.
Can I use other varieties of apples?
We tested with Granny Smith because that was shown in the original, and we agree it’s the best choice. Texture-wise, they’re nice and firm and can hold up the weight of the coating. Flavor-wise, the tartness is a nice complement to the sweetness of the chocolate and caramel.
Aren’t turtles supposed to have pecans?
Um- yes. Traditionally, anyway. You can substitute chopped pecans for the walnuts, if you prefer. We just liked the walnuts, too!
