The Barbie of desserts: @lilyghodrat's Upside-Down Peach Pastries. Most home kitchens cannot produce such an icon of beauty, with its perfect caramelization and browning. Kitchen reality must rule, and frankly, most of the time, the fruit will steam, not brown, under its blanket of pastry. That's baking 101. Do we love them any less? No! They may not look like the iconic original, but they will still look yummy, especially with a nice dusting of powdered sugar on top (the most forgiving of the sugars)! These pastries taste terrific as is, but there is no shame in trying the gild the lily. Either- powdered sugar or no powdered sugar, these are absolutely worth making! We've added all the info you need to the recipe in the video (including a tip that shortens the pastry thaw time from 40 minutes to less than 1 minute!) and the printable version below.
Upside-Down Peach Pastries

Ingredients
1 egg
2 tsp. water
1 large ripe peach (about 8 oz.)
1 sheet frozen puff pastry, thawed (see
thawing tip!)
6 tablespoons honey
Confectioners’ (powdered) sugar
Instructions
Heat oven to 400°F. Beat egg and water in bowl. Line baking sheet with parchment paper.
Cut peach in half (discard pit). Cut into about 20 (1/8"-thick) slices.
Unfold thawed pastry sheet. Cut pastry into 4 (about 3 1/2 x 5") rectangles. For each pastry, spoon 1 tbsp. honey onto baking sheet and spread to about 4x2" rectangle.
Arrange 5 peach slices on honey. Drizzle with another 1/2 tbsp. honey. Place pastry over peaches and press edges down to seal. Brush with egg mixture.
Bake 15 min. or until golden brown. Flip over and let cool on wire-rack (don't worry if some peach slices fall off, just put them back on!). Sprinkle with confectioners' sugar.
How do I thaw the pastry?
We are SO glad you asked! If you thaw according to the package directions, it will take about 40 min. at room temperature. OR you could use our trick and microwave it:
Wrap 1 sheet pastry in paper towel and microwave on HIGH 15 seconds, then turn over and microwave for another 15 seconds. If it doesn’t unfold easily, microwave for another 5
seconds on each side. You want it to still be cold but unfold easily so it doesn't break.
Can I make these with other fruits?
Yes! You can use nectarines or plums instead of the peaches. Or apples make a great fall version (may want to make the slices a little thinner so they cook faster, though)!
