Who wants fried pickles without all the work?


The real question is: who doesn't? Everyone loves fried pickles. Sure, you can get your pickle fix almost anywhere now, since the stores are innundated with pickle-flavored everything. But, fried pickles feel more like an event, maybe because you don't usually make them at home. No more, thanks to @cookiterica's Fried Pickle Fritters! They have everything you love about fried pickles in a quick, 2-step, 3-ingredient recipe. Rather than coating individual pickle slices or spears in batter and then frying, these fritters are made by chopping up the pickles and mixing them right into the batter. It's genius. We added some information to the recipe on the video (and on the printable version) so that you can make them perfectly at home!

 
Dill Pickle Fritters

6 to 7 fritters
About 25 minutes

Ingredients

1 jar (about 16 oz.) dill pickles (will

yield about 1 1/2 cups diced pickles)

1/2 cup chicken fry mix (find in the

baking/seasonings aisle)

Canola or other vegetable oil


Instructions

Drain and dice pickles, reserving juice.


Stir diced pickles and fry mix. If needed, add reserved pickle juice, 1 tbsp. at a time, until mixture is consistency of thick oatmeal.


Add oil to large skillet (you want oil to be about 1/2" deep. In 12"skillet that will be about 3 cups). Heat oil over medium heat (350 to 375°F.).


When oil is hot, spoon about 1/4 cup batter into skillet for each fritter (fry 3 to 4 at a time), pressing down to spread them a little in skillet. Cook fritters 3 min. Flip and cook another 3 min. Flip again and cook another 2 min. on each side or until golden brown and very crisp.


Drain on paper towels and serve hot with ranch dressing for dipping.


The video looks like you fry the fritters twice. Why is this version different?

You can fry the fritters twice, if you like. Just follow the directions as shown, removing the fritters to the paper towels after frying them for about 3 min. on each side. Then place back into the skillet for another 2 min. on each side.


We found that you get the same crispy result by just frying them for longer the first time. That way you don’t have to go through the whole frying process twice. We like to make things simpler where we can!
