Oatmeal may look boring, but it's has unlimited potential. Just because you can't see the pizazz doesn't mean that it's not there. We're voting for @Kate_clean-home's Strawberry Cheesecake Overnight Oats- a great simple recipe that turns oatmeal into a yummy grab-and-go meal prep breakfast. Oats, milk, Greek yogurt, spices and (surprise) cheesecake pudding mix combine with fresh strawberries, literally 5 minutes to prep, then put into the fridge and the next morning it's ready to go.

 

Strawberry Cheesecake Overnight Oats

2 servings
5 min. then chill overnight
Ingredients

1 cup old-fashioned or quick-cooking oats

1 cup oat milk

2 tbsp. vanilla Greek yogurt

2 tbsp. cheesecake pudding mix

1 tsp. vanilla extract

1/4 tsp. ground cinnamon

1/8 tsp. ground nutmeg

1/2 cup diced fresh strawberries


Instructions

Divide the following between 2 (8-oz.) glass jars: oats, oat milk, yogurt, pudding mix, vanilla, cinnamon, nutmeg and strawberries. Stir to combine.


Cover and refrigerate overnight. Stir before serving. Serve topped with crushed graham crackers, if desired.


What should I do with the leftover cheesecake pudding mix?

The recipe makes 2 servings and used 2 tbsp. of pudding mix (there’s about 6 tbsp. in one 3.4- ounce package. If you want to use the whole package, triple the other ingredients and make 6 servings.
