Keep a little summer in your freezer: TikTok Strawberry Clusters

I have a bag of these in my freezer and I can't stop eating them! This recipe by @thecanuk on TikTok that makes a great snack or dessert. They are icy little treats (they have a popsicle-like texture right out of the freezer) with fruit, yogurt and chocolate that are super-easy to make. They are a healthy-ish little snack- hey, they have fruit and yogurt, right? It's also a great way to use up any leftover fruit- raspberries, pineapple, banana- they all work! We just needed to add some additional information to the original video, like ingredient amounts and details! The info is added as an overlay to the original TikTok (video attached below). We also wrote a printable version with some nutrition data that you can open and print, if you'd rather. Whatever works for you!

 
Strawberry Clusters

6 large clusters
2 hours, 35 minutes

Ingredients

7 to 8 large ripe strawberries, diced

very small (about 1 3/4 cups)

1 cup plain Greek yogurt

2 tablespoons honey

1 1/2 cups semi-sweet chocolate chips

3 tablespoons coconut oil


Instructions

Line a 15x8-inch baking sheet with parchment paper (make sure baking sheet fits in your freezer first).


Mix the yogurt and honey, then stir in the diced strawberries.


For each cluster, spoon about 1/3 cup mixture onto the baking sheet. Freeze for 2 to 3 hours or until fully frozen.


For the chocolate coating, place the chocolate chips and coconut oil into a microwavable bowl. Microwave on HIGH for 1 minute. Stir well (if stirring doesn't get rid of any lumps, heat for another 20 seconds and stir well again).


Coat the frozen clusters with the melted chocolate and return to the baking sheet. Freeze for 30 minutes or until the chocolate is firm.


Remove from freezer about 8 minutes before you're ready to eat (this will make them easier to eat!).


Any hints?

Of course! We sometimes like to make 12 mini clusters instead of 6 large so they don't melt in our hands- use about 2 tbsp. strawberry mixture per cluster and increase the coating ingredients to 2 cups chocolate chips and 4 tbsp. coconut oil).


Can I use other types of fruit in this recipe?

Yes! You can substitute 1 3/4 cups raspberries, diced mango, diced pineapple or diced banana for the strawberries in this recipe. Or, try using thawed frozen berries (just make sure to drain them really well or the mixture will be too runny).
