Why are vegetables always the sidekick? I guess we need more recipes like the Cheesy Cauliflower Steaks from @hungryhappens. They are definitely the star of the show. We love it when something looks really foodie and impressive but is in fact super-easy to make. And you can make it as is (fab) or customize it with your favorite seasonings. We added some info to our version to help you- the video is below (full recipe at the end is easy to screenshot) or if you like to print things, there's a printable version down there as well! Cheesy Cauliflower Steaks

25 minutes

Ingredients

1 head cauliflower

1/4 cup olive oil

2 tbsp. grated Parmesan cheese

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. paprika

Salt & black pepper

1/2 cup shredded mozzarella cheese

1/4 cup chopped fresh parsley

(optional)


Instructions

Heat the oven to 400°F. Cut two (1 1/2" wide) steaks from the cauliflower (cut in the center where the root is- that's what holds the slices together). You will only get 2 steaks from each head of cauliflower, so reserve the remainder for another use.


Mix the oil, Parmesan cheese and seasonings in a small bowl. Season with salt and pepper.


Place the cauliflower steaks onto a parchment-lined baking sheet. Brush both sides of the cauliflower with the oil mixture.


Bake for 20 min. or until tender-crisp. Top with the mozzarella cheese.


Bake another 5 min. or until the cheese is melted. Serve as a vegetarian main dish!


Can I customize this recipe?

Yes! It's easy to customize this recipe. You can replace the seasonings with 1 1/2 tsp. of your favorite seasoning blend. From Italian seasoning to everything bagel seasoning, most will work because the Parm and mozzarella play well with lots of seasonings.


What can I do with the leftover cauliflower?

It is a little annoying that you can't use all of the cauliflower up with this recipe. But, having extra cauliflower around is handy- keep it in the fridge and serve it with dip as a healthy snack, or throw it in when you're cooking potatoes (they roast great, and are also delicious cooked and mashed!).
