Garlic Bread

8 servings
1 hour, 15 minutes

Ingredients

3 shallots

2 garlic bulbs

1 tbsp. olive oil

Salt & black pepper

1 stick butter, softened

1 tbsp. yellow miso

1/2 tbsp. crushed red pepper

1 loaf crusty Italian bread (about 1 lb.)

2 cups shredded mozzarella

2 tbsp. grated Parmesan

2 tbsp. honey (optional)

2 tbsp. chopped fresh parsley

(optional)

Instructions

Cut the tops off of the shallots and garlic bulbs (don't peel- just cut the top 1/4 off straight across).

Place the shallots and garlic onto a square of aluminum foil and drizzle with the oil. Season with salt and pepper. Wrap up to enclose and roast at 350°F. for 1 hr. or until tender and golden.

Let cool until you can handle, then squeeze the roasted shallots and garlic out of the peel and into a bowl.

Add the butter, miso and red pepper to the bowl and mix well. Season with salt and black pepper.

Cut the bread lengthwise in half and place onto a parchment-lined baking sheet. Spread the cut sides with the butter mixture. Sprinkle with the cheeses.

Bake at 350°F. for 15 min. or until the cheeses are melted. Drizzle with the honey and sprinkle with the parsley, if desired.

Is it weird that there's miso in this recipe?

We prefer to call it "inspired"! The miso brings a savoriness that enhances the other flavors perfectly. And the optional honey drizzle is a sweet complement that works beautifully!

f you're nervous about the honey, serve it on the side!

1/2 tablespoon seems like a LOT of red pepper!

It does! We thought it was a mistake at first, but when we made it up we realized that the heat is balanced by the richness of the cheese. So, we suggest that you give it a try!

Why isn't my bread as browned on top as the photo?

Depending on your oven, you may need to broil the bread for a minute or two to get a really bubbly, browned top. Just make sure to remove the parchment first (shouldn't use it in

the broiler).
