Life's too short- eat the good stuff first (this lasagna is ALL the good stuff).


If you love the crispy corners of lasagna, you're in luck. This Layerless Sheet Pan Lasagna by @giadadelaurentiis is ALL crispy bits. It's baked in a sheet pan in a single layer, so the sauce gets super-caramelized, with creamy dollops of ricotta on top, and the bits of noodle get nice and crispy. It also take a lot less time to bake than standard lasagna. Check out her recipe below, along with a few things we learned that can help you make it perfectly.

 
Sheet Pan Layerless Lasagna

Ingredients

4 tbsp. olive oil

1 lb. taccole pasta or broken lasagna noodles (2" pieces)

1 clove garlic, minced

1 tsp. Calabrian chili paste or 1⁄2 tsp. crushed red pepper

5 oz. baby spinach, chopped

1 cup part-skim ricotta

1 lb. spicy Italian sausage, casings removed

1 red onion, diced

4 cups jarred marinara sauce

2 1⁄2 cups shredded mozzarella cheese

1 1⁄2 cups grated Parmesan cheese


Instructions

Heat oven to 425°F. Brush 1 tbsp. oil on 12x17x1" baking sheet (the size of the baking sheet is really important- as is the depth- make sure it's 1" deep).


Cook and drain pasta reserving 1/2 cup pasta water. Return cooked pasta to pot.


Saute garlic and chili paste in another 1 tbsp. oil. Add spinach and cook just until wilted. Drain well. Stir in ricotta. Season to taste.


Saute sausage with remaining 2 tbsp. oil until done. Stir in onion and cook until tender.


Add sausage mixture, sauce, reserved pasta water, 1 cup mozzarella and 1/2 cup Parmesan to cooked pasta and stir to coat. Spread on baking sheet.


Top with ricotta mixture and sprinkle with remaining cheeses.


Bake 30 min. or until top is browned. Let stand 5 min. before cutting.


Can I use no-boil noodles?

That is literally the first thing we asked ourselves! We love to save a step whenever possible.


The answer is: you can, but it won’t have the crispy-topped, caramelized, flavor intensity of the original. That’s because it would have to bake covered in order for the no-boil noodles to absorb the liquid they’d need to cook. We really think it’s worth cooking the regular noodles!


Do I have to use spicy sausage?

Nope! You can use mild instead, or half mild and half spicy! You can also adjust the chili

paste to taste.
