Creamy Gnocchi

4 servings (about 3/4 cup each)
25 minutes

Ingredients

2 tbsp. olive oil

1 pt. (2 cups) grape tomatoes, cut in

half

5 cloves garlic, peeled and sliced

1/2 cup heavy cream

1 lb. fresh gnocchi (from

refrigerated section)

1/2 cup chicken broth

2 oz. fresh mozzarella cheese, sliced

and torn into small pieces (1/4 of 8-

oz. pkg.)

Fresh basil leaves

Instructions

Heat the oil in a 12-inch skillet over medium heat. Add the tomatoes and garlic and cook for 8 minutes or until the tomatoes break down, stirring occasionally.

Stir in the cream, gnocchi and broth and cook for 8 minutes or until the gnocchi are tender.

Season with salt and black pepper.

Top with the cheese. Cover and let stand until the cheese is melted. Garnish with the basil.

Can I use other types of gnocchi in this recipe?

You can, but if you use dried (usually on the shelf in the pasta aisle) or frozen, you will need to cook it according to the package directions first. If you do want to use frozen or dried, cook and drain them, then follow the recipe as shown.

Can I use shredded mozzarella instead of sliced?

Yes! 2 oz. shredded will be about 1/2 cup.
