Is it cheating to make a pie without slaving for hours in the kitchen?


Ah, the life of the 50's housewife. Free to cook and clean to her heart's content, never having to worry about things like having her own checkbook and pesky thoughts about her value and identity outside the home. Gross generalizations? Maybe. But it was a time where not slaving in the kitchen for hours was considered cheating and recipes were named as such, like this Cheat Lemon Pie. But, even if you love spending time in the kitchen, you shouldn't turn your nose up at this pie! It's actually pretty amazing (thanks, @superiodo0). Five ingredients (four if you don't want to garnish) and about 5 minutes of prep time for this no-cook pie. Make it, share it, then see if anyone turns their nose up at it. We'll wait...

 
Lemon Cheat Pie


2 pies (about 16 servings)
5 min. prep, 4 hr. freeze

Ingredients

1 can (12 oz.) frozen concentrated lemonade, thawed

1 container (8 oz.) frozen nondairy

whipped topping, thawed

1 can (14 oz.) sweetened condensed milk

2 (9") graham cracker pie crusts

1 lemon (optional)


Instructions

Whisk the concentrated lemonade, whipped topping and sweetened condensed milk in a large bowl until the mixture is smooth.


Pour the mixture into the pie crusts. Freeze for at least 4 hours or overnight (we like the texture after the overnight freeze better). Garnish the pies with grated zest from the lemon or lemon slices, if desired.


Any tips?

Yes! This is a frozen pie, with a texture like soft-serve ice cream. You will want to serve it right away, otherwise it will begin to melt like ice cream. Don’t worry. It will likely be eaten long before that happens.


Why a frozen lemon pie right before the holidays?

Excellent question! First, a pie recipe this easy is especially great around the holidays, when any time-saver is a win. Second, the sour- sweet, zingy flavor of this pie is a great end to a super-rich and heavy meal. It’s kind of like French fries- there’s always room for lemon pie!
