We really try to uncover new creators to highlight, but sometimes a recipe is too good and we have to break that rule. So here we are again with @britacooks. Her Garlic Baked Brie recipe was just too good to pass up. A round of brie is baked with garlic confit in a BREAD BOWL(!), so you can tear off pieces of bread and dip it into the runny baked brie. The garlic is simmered in oil and herbs to bring out the nutty sweetness before being baked with the brie, so it's garlic-forward, but in a very mellow way. Even if you're not a garlic fan, you might be swayed by this!
Garlic Baked Brie

Ingredients
20 peeled garlic cloves (about 1⁄2
cup)
1 sprig fresh rosemary
1 sprig fresh sage
1⁄2 cup olive oil
22-oz. loaf round crusty bread,
(about 8" diameter)
1 lb. brie, top rind removed
1⁄4 cup cranberry compote
(optional)
2 tbsp. honey
1 tsp. chopped fresh rosemary
Instructions
Heat the oven to 375°F. Cut into the top of the bread and remove enough so that the brie will fit inside.
Place the garlic, herb sprigs and oil into a small heavy saucepan. Simmer on low until garlic is tender. Discard herb sprigs and reserve garlic and oil.
Layer the following in the bread bowl: cranberry compote, half the garlic and the brie. Brush the bread with the reserved garlic oil and top with the remaining garlic.
Top with the honey and chopped rosemary. Bake for 25 min. or until brie is melted.
Let stand 10 min. before serving.
How can I use the leftover garlic oil?
We made a delicious classic vinaigrette with it. Take the leftover about 1/2 cup garlic oil and whisk in about 3 tbsp. balsamic vinegar. Season to taste with salt and pepper.
A classic vinaigrette is typically 3 parts oil to 1 part acid (in this case, vinegar). You can add more vinegar if you want more of that acid hit, but if you do, you should add a bit of sugar or
honey for balance.
