Elmo wants to share his feelings about these scones.



Elmo would want us to have these Cinnamon Roll Scones from @freshbeanbakery. Not only will eating them make us feel good- so will making them. There's something about getting your hands in some dough that's just therapeutic. What's also nice about these is that they have the biscuit-like texture of a scone, but the cinnamon swirl of a cinnamon roll. It's something really different and we will tell you, our kitchen went nuts for this recipe. It's just that good. And because they're scones rather than a yeast-based pastries, they're really easy to make, too!

 
Cinnamon Roll Scones

Ingredients

For the dough:

1 egg

1/3 cup + 1 tbsp. sour cream

2 tsp. vanilla extract

2 cups all-purpose flour

½ tsp. salt

1 tbsp. baking powder

3 tbsp. packed light brown sugar

8 tbsp. (1 stick) cold unsalted butter, cubed For the filling:

2 tbsp. unsalted butter, melted

3 tbsp. packed light brown sugar

1 tbsp. ground cinnamon

For the glaze:

1/2 cup confectioners’ sugar

1 tsp. vanilla extract

1 to 2 tsp. milk


Instructions

Mix dry dough ingredients in bowl. Add cold butter and cut in using a pastry cutter until pieces are pea-sized.


Mix wet dough ingredients and add to dry. Mix then knead lightly until dough comes together.


Roll dough into 10x14" rectangle on floured surface.


Stir filling ingredients in bowl. Spread over dough and roll up dough tightly around filling.


Wrap and freeze 1 hr.


Heat oven to 425°F. Cut dough into fourths, then diagonally in half to make 8 roughly triangular (see tip!) pieces. Place on parchment-lined baking sheet.


Bake 12 min. or until golden brown. Let cool, then mix glaze ingredients and drizzle over top.


Why don’t the scones in the picture look like triangles (since they’re cut in triangles)?

As the scones rise, some tip over as they finish baking. We expected this, since cut sides always expand more than uncut sides.


It does give these scones a nice rustic look, and showcases the cinnamon swirl, so we weren’t mad!


Another upside? More surface to drizzle with the glaze!


Anything else we should know?

You can brush the unbaked scones with heavy cream or egg wash (1 egg + 1 tbsp. water) for better browning.
