Do we try to eat healthy? Yes. Do we find that depressing sometimes? Also yes. But there is a magical term called "positive nutrition" that sometimes allows things that taste delicious to be also, shall we say, healthy-adjacent? A Snickers bar does not fall into this category. But, Snickers Dates do! This recipe from @myhealthydish is easy, inexpensive and tastes similar to a Snickers bar, but the caramelly flavor comes from dates, a fruit that has positive nutrition in the form of vitamins, minerals and fiber. Snickers Dates
Makes 6
10 minutes hands-on, 1 hour chill
Ingredients
6 Medjool dates (buy the type with pits,
they are usually larger and softer)
6 pecan halves
3 tbsp. peanut butter
1/2 cup milk chocolate chips
1/2 tbsp. coconut oil
Coarse sea salt
Instructions
Cut a slit in each date to remove the pit (the date should be open, like a book).
Place 1 pecan half in the center of each date and spread 1/2 tbsp. peanut butter on top of the pecan. Close the dates around the peanut butter/pecan filling (don't worry if
it's not perfectly enclosed).
Place the chocolate chips and coconut oil in a small microwaveable bowl. Microwave on HIGH for 45 seconds. Stir well (if stirring doesn't get rid of any lumps, heat for another 20 seconds, then stir well again).
Coat the stuffed dates with the chocolate and place into a parchment paper-lined container. Top each with a pinch of sea salt.
Refrigerate for 1 hr. or until the chocolate is firm. Store in the refrigerator until ready to eat.
Do I have to use pecans?
Pecans give these treats a praline vibe, but you can also use any shelled nut. If using smaller nuts instead, like peanuts or almonds, use more than one (3-4 peanuts or 2-3 almonds, depending on size). Peanuts will give you a more traditional Snickers flavor.
Can I make these in less than an hour?
Yes! The chocolate will set faster in the freezer, so freeze for about 30 min. after coating, then store in the fridge as directed until ready to eat.
