Croissants instead of bread for stuffing? GENIUS!


Relativity, schmelativity. Our big discovery? Making your holiday stuffing with croissants instead of bread. Boom. Mind blown. Thanks, @anamazingappetite! It's just as easy to make with store-bought croissants and the croissants take this stuffing to a whole other space (and time- get it?). They're buttery and the ragged edges from the torn pieces get crispy and the whole thing is just superior to run-of-the-mill bread stuffing. This version seems to take inspiration from the Half Baked Harvest recipe, and we couldn't resist adding back some of those elements- the addition of Gruyère cheese to the caramelized onions gives the stuffing a French onion spin that just tastes amazing. Caramelized Onion Croissant Stuffing

Ingredients

6 tbsp. butter, divided

2 tbsp. olive oil, divided

2 cups thinly sliced onion

2 tsp. sugar

2 tsp. balsamic vinegar

7-10 large croissants (about 1 1/4 lb.),

torn into 2" pieces

2 cups finely chopped celery

3 cups sliced cremini mushrooms

1 tbsp. chopped fresh sage

1 tbsp. chopped fresh thyme

2 1⁄4 cups chicken broth

3 large eggs

1 tsp. each garlic powder and onion

powder

1 1⁄2 cups shredded Gruyère cheese


Instructions

Spray croissant pieces with cooking spray and bake at 350°F. for 5 min. until crisp.


Cook onion in 2 tbsp. butter and 1 tbsp. oil in 12" skillet over medium heat 5 min. Add sugar and cook on low 30 min. or until caramelized. Season with salt. Add vinegar and cook 2 min. Remove mixture from skillet.


Cook celery in 1 tbsp. oil in skillet over medium-high heat 4 min. Add 4 tbsp. butter and the mushrooms and cook 6 min. Stir in sage and thyme.


Beat eggs, broth, onion and garlic powders in large bowl. Add croissants, vegetables and cheese and mix lightly. Spoon into 13x9x2" baking dish. Cover with foil.


Bake at 350°F. 30 min. covered, then uncover and bake 10 min. to brown top.


The video seems simpler than this recipe. Why?

In order to bring you the best stuffing, we included some elements from the inspiration recipe from Half Baked Harvest. You can still make the simplified video version. Just omit the mushrooms and the cheese. We highly recommend this version, though. It’s boss.


Any other options you didn’t tell us about?

Actually, yes! You can also add 3/4 cup chopped pecans and 1/2 cup chopped fresh parsley to the mixture before baking for additional crunch and color.
